Consumer demand for high-quality food is no longer limited by seasonality or origin. Freshness, flavor, and nutritional value have become key expectations across both food service and retail markets. However, conventional mechanical freezing, due to its slower cooling rate, often causes drip loss, texture and color degradation, nutrient loss, and 5%–10% product weight reduction after thawing — impacting both quality and profitability.

Linde LienHwa will participate in FoodTech Taipei from June 24–27, showcasing its cryogenic solutions designed to help food manufacturers enhance product value, optimize production efficiency, and strengthen market competitiveness.

The global food industry is rapidly adopting liquid nitrogen rapid-freezing technology to reduce ice crystal formation and prevent cellular damage, thereby preserving product appearance and nutritional value while enhancing product value and production capacity.

Liquid Nitrogen Rapid Freezing Gains Momentum
As global food standards rise and supply chains evolve, the market is shifting from preservation-focused processing toward quality- and value-driven production. According to Fortune Business Insights, food applications now account for 30.38% of the global liquid nitrogen market, making it the largest application segment.

Jeffery Shan, Vice President, Head of Merchant & Clean Energy at Linde LienHwa, noted that while around 85% of food products in Asia-Pacific still rely on conventional mechanical freezing, liquid nitrogen rapid freezing — with only 15% market penetration — has already created approximately EUR 1.5 billion in market value, reflecting its strong premium positioning.

Facing trends such as plant-based foods, clean-label demand, climate-driven supply instability, and export market expansion, ultra-low-temperature freezing at -196°C helps preserve nutrition, texture, color, and flavor, delivering freshness similar to farm-to-table products.

Preserving Freshness While Reducing Product Loss
Compared with conventional freezing, liquid nitrogen rapid freezing minimizes ice crystal formation and moisture loss, helping maintain product quality and saleable weight.

For prepared foods, traditional slow freezing typically results in 5%–10% moisture loss, equivalent to 50–100 kg of product loss per metric ton. Cryogenic freezing reduces the loss rate to 1%–3%, preserving an additional 40–70 kg of saleable product per ton.
